Creamy Pesto Chicken & Broccoli Pasta

I had a lunch meeting at Corner Bakery and love their Pasta Cavatappi – So, I wanted to find something similar and found this recipe. I was proud of myself for cooking and eating something with vegetables (not a lover of them, working on it).


1 cup of broccoli
4 cloves of garlic
1/2 onion
1/4 cup pesto
4 cups of whatever pasta you’d like – I used penne
1/4 tsp of pepper
1/2 tsp of salt
1 tbsp of olive oil
1 cup of milk (or half and half/light cream)
1/4 grated parmesan cheese


1. Cook the pasta according to package directions, and add in the broccoli 1 minute before turning off the heat
2. Pour the olive oil into a large pan
3. Add onion and cook for 3-4 minutes
4. Add garlic for a few seconds then the chicken (I seasoned the chicken with salt and pepper)
5. Cook chicken until it’s golden brown
6. Add parmesan, milk and pesto and cook for 2-3 minutes
7. Add pasta and broccoli and cook for 2-3 minutes
8. Add more parmesan to garnish at the end and make your Instagram picture better lol
